Is there a way to combine multiple dat files in to a single one?

Sure...use a texteditor and merge them. They are plain ascii text files. Of course you should be aware of not producing double set entries or double descriptions (although cmpro's parser will automatically fix them).
IIRC Cowering, author of the good* series, created a tool called Superdat, which merges dats.

most likely as a trigger in #rareroms or on his homepage....which I forgot at the moment..should be too hard to find.
