Hmm, Shin Megami Tensei Nocturne was fun, but the difficulty curve is off the hook. I hear Digital Devil Saga is a good bit better, but I've yet to devote the proper time to it.
Dark Cloud 2 may cure your short term RPG blues, but it's doubtful it'll hold your interest long enough to finish it.
Disgaea has a great storyline, some fucking brilliant voice acting, and a combat system that both encourages levelgrinding like a motherfucker and keeps it interesting.
Monster Hunter has wonky controls, but it's pretty much a 3dish Diablo/Guild Wars with wonky combat controls
Okage is supposed to be somewhat interesting. Haven't spent any time with it yet.
Star Ocean 3 is badass with a few critical flaws that you can only overcome with a faq or strat guide (the combat system isn't explained at all ingame and the invention system is reasonably important and yet horribly documented ingame). Loved the storyline, combat system, graphics, animations, music, etc in it. Some of the worst voice acting of the current generation, though :(
For something a little different, have you thought about maybe picking up Way of the Samurai or Blood Will Tell?
