NES - VirtuaNES is best. Nothing else comes close
SNES - ZSNES does it but SNES9x is way easier and more intuitive to record with
Genesis - There's a modified build of Gens out there that does it pretty well.
CPS1 - BuddaMAME should do you fine, I think.
