Well, there are a shitload of good DOS games, but i donīt know what you like or not. So, i will just throw some names out, okay ?
Stunts : must have game. The original stunt driving game, with a suberb and easy to use track editor. hard to master, easy to learn, must have.
Raptor : Call of Shadows : 2-D Vertical Shump. Really good, clever level design +upgrade ship through buying parts.
Tyrian (or Tyrian 2000) : 2D Vertical Shmup, Awesome level design, awesome graphics, awesome OST, awesome upgrade system (buying ships AND parts) and a shitload of easter eggs and replay value.
The Dig : Lucasarts Point and Click game, but iīm not sure if this is a SCUMM game.
Tie Fighter : Play as the evil galatic empire to blast the rebel scum, simulator as far as it can be, i guess, REALLY good.
Dark Forces : First SW FPS evar. Enough said.
Slipstream 5000 : Ship/planes/futuristic racing game, really fun.
Pinball Fantasies / Pinball Dreams / Psycho Pinball : Kickasses pinball games.
Hocus Pocus : Fun 2d Plataform.
Jazz Jackrabbit : Imagine what would happen if Sonic (or mario, but more sonic) had a big ass gun to shoot shit. FUCKING A game, with a historic OST.
Commander Keen Series : Thereīs 6 of them, i think, but still the ones i played are really good, 2d plataformers. Duke Nukem : the original ones are 2d plataformers, which sports a clever level design + nice atmosphere.
Death Rally : pseudo 3d game on the likes of Rock and Roll Racing, featuring Duke Nukem as one of the characters.
Leisure Suit Land Larry : Adventure, help Larry to get laid (number 5 in the series, is the best imho).
Day of Tentacle : Sequel to Maniac Mansion, and SO MUCH better imho. Get the CD version with talking characters, itīs actually a good gaming interpretation ?
Full Throttle : Lucasarts point and click, one of the best.
Sam & Max : Hit The Road : again, lucas arts and Point and Click.
Chuck Yeagerīs : WWII flight Sim. Really fun.
Crusader : No Remorse : pseudo 3d shooter/exploration.
Relentless : Little Bigīs Adventure Twinseen (i never knew the official name of this, but whatever it is, get it.) : this game kicks major ass.
Seek and Destroy : Top View Chopper game, rescue hostages, destroy targets, really fun to play.
thereīs a lot more i am forgetting right now, but this should be able to get you started.
