If I had an AES it would have to have component video output and those are a friggin rip off so I'd probably have to have a nice MVS cabinet. Is all that stuff JAMMA standard? I don't know much about arcade hardware but isn't it all supposed to comply with JAMMA or something? I saw some CPS2 boards on eBay and that stuff is dirt cheap. If I could toss different boards that would easily connect to the components in the cabinet then I'd definitely have to eventually get a nice cabinet.
