Not for the faint of heart, but the RGB mod is pretty sweet.
Have not tried it myself though (got a JAMMA rig that gives native RGB).

You will then need an upscaler to get it to display in an LCD TV or modern monitor.
I made a little compendium here, after spending about a month debugging issues with a cheapo chinse upscaler I bought.

Now resisting the temptation to go for something better.
There's a super sweet japanese upscaler (xRGB mini framemeister), but its price is very sour (500 bucks!).
