How the hell is this done?
My initial response is that it is fake in the sense that there is no emulation involved,...but how is it played then?
Can someone enlighten me?

Glancing at the clip, it looks like he's playing the game using Chankast, the Dreamcast emulator - it can run Capcom fighting games like 3rd Strike, Marvel vs Capcom 2, Capcom vs SNK 2, and of course other Dreamcast games as well.

Grab the PS2 version for like $10 instead. Or XX#Reloaded on Xbox for like..$10-$15.

I remember that in Chankast there's no way to run fullscreen. u can only play in a single predefined resolution in a window.

and that's what it look like. because why would u play in a small window when you can play fullscreen?

tho what amazes me is he can play those type of game using a keyboard... I personlly have to have a gamepad

No, I've run Chankast in fullscreen mode. If I remember right you just need to press Right Alt + Enter.

Forgot to comment on your other remark.

If you go to Options --> Configure Video --> Video Mode, you'll find some resolution choices. You're not forced to "play in a single predefined resolution".

FYI, I just finished playing Capcom vs SNK 2 on Chankast and I was playing it full screen.

I simply started the game, then pressed Right-Alt + Enter.

Also, from the Chankast home page:

07/07/2004: Chankast Alpha 0.25 released

- FullScreen and multiple resolution support
- CPU core bugs fixed
- VmsBrowser integration
- LCD CMU support
- LCD VMU emulation
- Rumble pack emulation
- Control and CD plugin support
- Windows 2000 compatibility (ASPI driver)
- Command line support to run home made binaries

Remember, prior to 0.25 you could full screen by dragging the window to fit your screen manually with your mouse, so in all truthfulness you could always run the emu in full screen if you so desired to.
