just got my EM-500 and can't find a site to learn how to use mameboy, could someone please list some sites with any guides, i have installed it but can't figure out how to play

First of all make sure to read readme file. You will need roms to make mameboy (or any other mame for that matter) work. Check out www.mame.dk for roms.
