Apparently the "Game Keys" software isn't installed with the 560 series Jornadas- anyone know how to install this, or what I can do to get around this?

The J568 does not need any special "game key" software. This only applied to the SH3 Hp devices.
The ARM version or the Autoinstaller should install a version that works Correctly on your 568 device.
Read the directions on how to get past the OK screen (hint left, right).
