I've an HP Jornada 565 and I recently installed MAME, but.... where I must place all the roms ?

You have to create a dir:
We have this architechture:
\MameCE\MameCEALL.exe
\MameCE\roms\paperboy\(the rom is here)

that's all!. But you should read the readme first. Everything is written there :)
