Okay, the new update is great. Changing the buttons is a big help. But I still have a problem I can't get around. A week or so ago, I did something where the config screen constantly pops up on any button I press. How can I get it to stop? Thanks in advance for your help.

Use the File Manager or File Explorer. Browse to the CFG folder.
Delete all files in this folder. They will be recreated the first time you play each game. This will basically reset any MameUI game key changes.
You can mow use the NEW MameCE3 Game Key Configurator. :)
