I installed MAMECE 8.1 (extra large build) on my Casio E-125 and downloaded pac man and galaxian. When I run the MAMECE program, it doesn't show any games available. I set up the directory structure as suggested, with MAMECE, MAMECE\ROMS and MAMECE\SAMPLES. I have not unzipped the roms. Do I need to also download a SAMPLE file too? Please help. How do I get MAMECE to show which roms I have on my device?

Don't bother with samples. They aren't even supported.
Try selecting "show clones" and see if they show up.
If not, select "show all games" then scroll down to the
game you wish to play. Try all of the games listed with names similar to what you want (there are likely a number of variations).
If that doesn't work, you either have bad roms or don't have them in the right place.

I can't rememeber if those games are supported in my builds(I think they are). But try Donkey Kong, Frogger or Puckman first to see if the app runs them (since i know they work:)
Post if you have problems with those as well.
