If you have a mod chip, get the TATX bios (same bios as used by Devs, only hacked to run on a Modded machine). Then get the Xbox shell (dodgy, but might be out there), install it and you can then browser the Xbox Network, right-click on an Xbox and select screen capture.

That's what I do, and it's great ;-)
